Cranberry Beans and Broccoli Salad with Lemon Tahini Dressing

 

Ingredients for Salad

½ cup boiled cranberry beans

1 cup organic broccoli florets, blanched

1 small organic tomato, sliced

1 ½ cups organic salad mix

3 tablespoons of lemon tahini dressing

1 tablespoon roasted sesame seeds

Method

Combine broccoli, cranberry beans, tomatoes and salad in a bowl.

Make the lemon tahini dressing and drizzle over broccoli mixture and stir evenly to coat.

Tastes great when served immediately. If you need to refrigerate it for later, you may have to add a bit more of the dressing in case it gets a little dry.

Lemon Tahini Dressing

1 garlic clove, minced

1 tablespoon chopped ginger

Pinch of salt

½ teaspoon chilli flakes

1 tablespoon soya/tamari sauce

1 tablespoon lemon/orange juice

1 tablespoon grapeseed /canola oil

1 tablespoon maple syrup

2 tablespoons tahini

In a mortar place garlic and ginger, add a pinch of salt, chilli flakes and grind. (If you don’t have a mortar grind all the dressing ingredients in a blender).

Add the soy sauce, lemon juice, oil, maple syrup and tahini. Mix well.

Can be stored in the refrigerator for up to a week in an airtight container.
