½ cup whole hazelnuts
12 whole Medjool dates, pitted and chopped
2/3 cup almond butter
1/3 cup raw cacao powder
2 tablespoons water
1 teaspoon vanilla extract
1 tablespoon cacao nibs
1 teaspoon maca powder (optional)…see Notes
¼ teaspoon sea salt
Preheat oven to 180°C.
Spread nuts on a small baking sheet. Bake at 180°C until lightly toasted. Cool for 10 minutes.
Reserve 20 hazelnuts.
Pulse remaining hazelnuts in a food processor until finely chopped.
Add dates, almond butter, cacao powder, 2 tablespoons water, vanilla, maca powder, cacao nibs and salt and process until well combined.
Turn mixture out into a bowl, divide into 20 equal portions.
Roll each portion around 1 whole hazelnut to form a ball.
Roll each brownie ball in chopped hazelnut, hemp seeds, unsweetened coconut and raw cacao powder.
Refrigerate for about 3 – 4 hours until firm. Enjoy!!!
