Banana Bread Energy Bites

 

Ingredients

15 pitted Medjool dates

1 medium ripe banana

1 cup almond flour/meal

1/2 cup unsweetened shredded coconut

1/2 cup chopped pecans

1 tablespoon chia seeds

1 tablespoon vanilla extract

1/4 teaspoon salt

1/2 cup semisweet mini vegan chocolate chips or dried bluberries

Method

Place all ingredients except chocolate chips/ blueberries in a food processor.

Process until mixture forms a dough. Remove from food processor to a medium bowl and stir in chocolate chips or blueberries

Roll dough into balls and place on a parchment paper-lined container.

Chill energy bites for 1 – 2 hours or until firm.

Eat them just like that or roll them in toasted sesame seeds or raw cocoa powder.
