1 cup horse gram
½ cup white sesame seeds
1 cup curry leaves (washed and dried)
½ – ¾ cup dried red chilies (adjust according to spice preference)
1 teaspoon asafetida powder
1 teaspoon oil
Roast the horse gram until they start to splutter and has turned completely brown. Set aside
Roast the sesame seeds until they turn golden brown.
Cut the dried chillies into small pieces.
Add 1 teaspoon of oil to a cast iron pan and roast the dried chillies over a low flame until they are crispy. Off the flame. Add the dried curry leaves. Add the roasted horse gram and the sesame seeds and stir everything together. Let it cool.
Using a blender or a food processor, grind the mixture. Add the salt and asafetida, pulse it for about 10 secs. The consistency of the powder depends on personal preference. Some people like it coarse while others like it more smooth.
