Horse Gram Idlis

Health benefits of horse gram:

Horse gram is a type of lentil. In Ayurveda, it is used as medicine to treat many ailments.

Ingredients

1 cup Horse gram

3 cups idli rice

½ cup urad dhall

¼ cup Poha/aval (flattened rice)

½ teaspoon fenugreek seeds

1 ½ teaspoon salt

Method

Wash throughly and soak the horsegram overnight.

Wash and soak the rice together with the fenugreek seeds and the poha for around 4 – 6 hours.

Wash and soak the urad dhall for about 1 hour.

Drain the water and grind the horse gram to a smooth paste adding some water as needed. Keep it aside

Next grind the rice, poha and urad dhall to a coarse consistency. Add little water at a time. The batter should not be runny. (use the water that the rice was soaked in…speeds up fermentation)

Combine the rice mixture with horse gram paste. Add salt and mix well.

Keep it in a warm place and allow it to ferment for at least 8 hours.

After fermentation, mix the batter gently with a ladle.The batter should be of normal idli batter consistency.

Grease the idli moulds with oil. Add little amount of batter in each of the moulds.

Place the moulds in a steamer or pressure cooker without the whistle. Steam for about 10 minutes.

Remove  the idlis from the mould. Serve with a side dish of your choice.

Note: Can use the leftover idli batter to make uttapam (savoury indian hotcake) or plain dosa
