Vegan Chocolate Chip Cookies

Ingredients (makes 24 cookies)

1 1/4 cups organic unbleached all purpose flour

1 teaspoon baking powder

½ teaspoon sea salt

2/3 cup raw cacao powder

¼ cup pure coconut oil

¼ cup mashed avocado

½ cup coconut palm sugar

1 teaspoon vanilla extract

¼ cup non dairy milk ( I used rice milk)

½ cup vegan chocolate chips

Method

Preheat oven to 180 C. Line a baking sheet with parchment paper and set aside.

In a bowl, mix together flour, baking powder, salt and cacao.

Using a hand held mixer, beat the coconut oil, avocado and sugar until creamy and smooth. Add in the vanilla extract.

Add half of the flour mix and some of the milk to the avocado mix and stir well. Then add the remaining flour and milk and mix well until all the flour disappears. Stir in the chocolate chips.

Form small balls and slightly flatten the dough and place on prepared baking sheet. Bake for about 15 minutes or until set around the edge.

Let the cookies cool for about 2 minutes and then transfer to a wire rack and let them cool completely. Enjoy!!!!!img_6425
