Sweet Potato Ondeh Ondeh (Dumplings)

Ingredients (makes 6)

120 grams sweet potato

4 tablespoons glutinous rice flour

Palm Sugar, cut into 6 small cubes

10 tablespoons fresh grated coconut, for coating

Pinch of salt

Method

Clean and cut the sweet potatoes into 1 inch pieces and boil them in water until softened. Remove skin and mash it up.

Mix the salt with the grated coconut.

Add the glutinous rice flour to the mashed sweet potato and knead it into a dough. If it is too dry, sprinkle some water and knead again. If it is too moist, add some rice flour.

Divide the dough into 6 equal portions and form a ball. Flatten the center and fill the center with palm sugar cube. Roll them in your palm to form a smooth ball.

Bring a large pot of water to boil. Gently place the balls in the water and cook until the balls float to the surface of the water.

Reduce heat and simmer for about 3 minutes. Gently, remove the balls and coat them with the fresh grated coconut and enjoy!!!
