Ingredients ( makes 3 pizza crust)
1 cup red lentils
1 cup water
½ clove garlic
¼ tsp salt
¼ cup fresh italian basil
1 tablespoon dried oregano leaves
Preheat the oven to 180C/350F.
Soak lentils for 30 minutes.
Blend all ingredients until the lentils are thoroughly broken down.
Preheat a cast iron pan and grease with some oil.
Pour about ½ cup of batter into the pan and spread with the back of a spoon. ( it will look like a big pancake or indian dosa) Drizzle some olive oil and cook over medium heat. The thickness of the pancake depends on personal preference…..thick or thin crust.
Cook for about 3 minutes or until top is dry/cooked through.
Flip and cook for a further 2 minutes.
Place the pizza crust on a baking tray and cook for a further 10-12 minutes until the crust ends turn crispy.
Remove from the oven and top with sauce & toppings of your choice. If using hard cheeses, place it back in the oven for another 3-5 minutes
Drizzle some olive oil, slice and serve.
