Quinoa Banana Coconut Cookies



2 medium ripe bananas

1 cup unsweetened shredded coconut

1 cup quinoa flakes

¾ cup almond butter

2 tablespoons maple syrup

1 teaspoon vanilla extract

Optional: chocolate chips, raisins, seeds. ( I used vegan semi sweet mini chocolate chips)




Mash the banana and mix it with the maple syrup and vanilla extract.

In a bowl, add the shredded coconut, quinoa flakes and optional ingredients.

Add the mashed banana mixture to the dry ingredients.


Melt the almond butter over a low flame. Add the melted almond butter to the mixture and stir well.

Shape them into cookies and bake at 180 C for 15 mins.


Cool them on a wire rack and enjoy.
