Ingredients (serves 3)
1 cup cooked chickpeas
1/2 teaspoon fresh lime juice
1 shallot, chopped finely
2 tablespoon cilantro, chopped
5 cherry tomatoes , chopped
½ teaspoon harissa
½ teaspoon mediteranean spice mix
1 tablespoon pine nuts
6 slices whole wheat bread, toasted
Salt to taste
Extra Virgin Olive oil to drizzle
In a bowl, smash together chickpeas and avocado with the back of a fork until you get the texture that you desire.
Mix in the rest of the ingredients.
Spread onto one slice of bread, drizzle olive oil and top with another slice of bread. Serve and enjoy!
