2 cups chopped gotu kola leaves
1 cup chopped parsely
½ cup fresh grated coconut
8 cherry tomatoes, cubed
1 or 2 green/red chillies based on desired spice level
2 shallots chopped finely
1 teaspoon sugar
Juice of 1 lime
Salt to taste
Note: Fresh Coconut is grated using a traditional coconut grater.
Wash parsley and gotu kola thoroughly to get rid of grime and mud particles.
Spin gotu kola and parsley in the salad spinner. Chop them finely and place them in a bowl.
Add chopped chilli, shallots and tomatoes and grated coconut.
Mix all ingredients well and add salt to taste. Toss with fresh lime juice and sugar.
