Oats Chia Banana Breakfast Pudding

 Ingredients

½ cup rolled oats

1 small banana (mashed)

¾ cup homemade unsweetened almond milk

1 tablespoon chia seeds

½ teaspoon cinnamon powder

Topping

3 tablespoons homemade raspberry jam

Granola (refer granola bar recipe … crumble 2 bars)

Method

Mix all ingredients well and store it in a covered container overnight in the fridge. (Min 3 hours)

In the morning, stir the mixture to combine.

Place 3 tablespoons of the mixture in a serving glass. Top it with one and a half tablespoons of jam and granola.

Repeat to form one more layer and enjoy.

Note: If the mixture has a runny consistency even after they soak, simply stir in an additional 1 teaspoon chia seeds and place the mixture back in the fridge until it has thickened up. If the oat mixture is too thick, simply add a splash of almond milk and stir to combine.
