Lima Beans Quinoa Salad


Salad Ingredients ( for 3 servings)

2 cups arugula washed and chopped

¾ cup cooked lima beans ( soaked for 2 hours and pressure cook to 3 whistles)

½ cup cooked quinoa

10 cherry tomatoes, cut into halves

½ medium fennel, sliced

1 small yellow pepper, sliced

1 small purple pepper, sliced

½ white onion, sliced

½ avocado, cut into small cubes

½ orange, sliced

¼ cup cranberry

¼ cup sunflower seed


Juice of 2 calamansi limes

Juice of ½ orange

4 tablespoons extra virgin olive oil

1/8 teaspoon all spice powder

1/8 teaspoon middle eastern spice mix (optional)

1/8 teaspoon crushed black pepper

1 teaspoon maple syrup

Salt to taste ( pink himalayan sea salt)

Mix together all the salad ingredients.

Combine both and stir lightly to mix.



Note: If cooking Lima Beans on stove, soak it overnight. Rinse the beans well and cook until they are tender.
