Vegan Banana Bread


 1 ½ cups organic unbleached flour

1 ¼ teaspoons baking powder

½ teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground cloves

1/8 teaspoon salt

1 cup mashed banana ( use very ripe bananas)

½ cup canola oil or coconut oil

2 tbsp almond milk or any other milk

¼ cup walnut

¼ cup raisins

zest and juice of 1 orange



 Preheat oven to 350C.

Grease and flour a 9” loaf pan.

In a medium bowl, stir together flour, baking powder, baking soda, cinnamon, clove and salt.


In a large mixing bowl, stir together banana, oil, orange juice and zest.


Stir flour mixture into banana mixture until the batter just comes together. Do not over stir.

Add almond milk, walnuts and raisins and give it a quick stir.


Pour mixture into loaf pan and bake for about 50 – 55 minutes. Cover the loaf pan with foil if it starts browning too quickly.

Cool bread thoroughly, wrap in foil and refrigerate overnight for flavours to set in.

Toast it and have it for breakfast with home made raspberry jam and coffee or dress it up as a dessert! And of course  you can also enjoy it with your favourite cup of tea!!!
