Quinoa Fried Rice


*2 cups cooked quinoa

kaffir lime
I cook my Quinoa with kaffir lime leaves from my garden, for added flavour!

1 tablespoon cooking oil

2 stalks green onion, chopped

1 clove garlic, finely minced

1 teaspoon grated fresh ginger

¼ cup red/green bell pepper

¼ cup fresh corn

¼ cup diced carrots

1 ½ teaspoon tamari sauce

freshly ground black pepper or chilly flakes



Heat a wok or large sauté pan over high heat. Add oil. Add in the green onion, ginger, garlic and chilly flakes. Stir fry for 30 seconds until fragrant.

Add the corn and carrots and cook covered for about 5 mins. Then add bell peppers. Add salt to taste and ground black pepper.

Add cooked quinoa. Toss and stir fry for 2 minutes, spreading everything out over the surface of the wok.

Add tamari sauce. Stir fry for an additional minute. Taste and add in additional salt or chilly if needed. Garnish with chopped green onion or cilantro and diced red chillies.
