1 small avocado cubed
½ mango cubed
½ cup boiled black eyed beans ( or any other beans)
¼ cup pomegranate
½ red onion sliced
¼ cup chopped parsley
salt pepper and 1 tbsp lemon juice
Place the first 5 items in a bowl. Combine salt pepper and lemon juice. Drizzle over salad and lightly toss to combine.
