Almond Butter Energy Balls

Ingredients (  makes 24 balls)

¾ cup almond butter

2 tablespoons coconut oil

1 cup rolled oats

½ cup shredded coconut

2 teaspoons honey ( or maple syrup)

3 tablespoons chocolate chips

¼ cup roasted slivered almonds

Method

Melt almond butter and coconut oil in a saucepan to soften.

Mix in oats, honey, chocolate chips and slivered almonds.

Shape into 1 inch balls and refrigerate.

To serve as dessert, dress them up with vegan chocolate ganache.

Vegan Chocolate Ganache

½ cup honey or maple syrup

½ cup cacao powder

¼ cup dark chocolate chips ( I use non-dairy )

2 tablespoons coconut oil

Method

Using a blender or whisk, mix together honey and coconut oil until well blended.

Add in cacao powder and process until smooth.

Pour mixture in a bowl and add melted chocolate chips and stir well.

It can be used immediately or stored in an air tight container and refrigerated for later use.

Dip the almond butter balls in the ganache and refrigerate immediately.
